In my area of the industry, towing, a lot of times the only entry level spot on a vessel is the cook/deckhand job. That often means the guy doing the cooking doesnt really know the job. When i got back from Iraq, the only job available on the boat i was on was the cook deckhand job. I wish I had some kind of manual to help me, so i wrote one for everyone else when I moved up to a Mate job. Lots of recipes, menu planning, and all kinds of tips and techniques.
